PURPOSE: To produce infant food and formula diet decreased in antigenecity by obtaining Bifidobacterium producibility by cleavage of sialic acid from milk protein and its decomposition product.
CONSTITUTION: Dilute hydrochloric acid, phosphoric acid and, if desired, further citric acid are added to milk or a milk product and its pH is adjusted to 1 to 3. The milk or milk product is then heated for 1 to 24 hours under a pressure from the atm pressure to 5 bar at 40 to 90°C to cleave the sialic acid from the milk protein. The reactant is then neutralized with KOH, NaOH, Na
2CO
3, K
2CO
3 and/or Ca(OH)
2 and simultaneously the required concn. of minerals is adjusted. The milk or milk product is thereafter heated for a short time at 80 to 100°C if desired, following which ordinary components, such as fat, carbohydrate, minerals and vitamins, are added thereto. The milk or milk product is subjected to milk processing, and if desired, the resulted Bifidobacterium productive infant food or formula diet is spray dried.
