A sweetener comprises hollow spheroids or part spheroids of microcrystalline sucrose, generally bound to crystals of sucrose, and preferably containing one or more high intensity sweeteners such as sucralose. The sweetener is prepared by spray drying a sucrose syrup with simultaneous injection of an inert pressurized gas and, generally, contacting the sprayed syrup during the spray drying step and/or after completion of said step, with crystals of sucrose, and preferably by incorporating a high intensity sweetener in the syrup or in the agglomeration step. |

A sugar processing facility, including a boiler, a mixing tank, and an interconnecting assemblage of pumps, motors, control valves and liquid conduits, for commercially processing granulated sugar into either sucrose or invert sugar. The sugar processing facility is sized for integration into the production processes of commercial beverage bottling facilities and is operable on an unimproved site adjacent such facilities. The facility is mounted upon a standard sized flat bed trailer, thereby permitting it to be transported as a fully assembled and operable unit by standard rail, ocean freight, and road transportation methods to a desired processing location without having to first at least partially disassemble or otherwise specially adapt the facility for transportation. |

In a process for the production of powdered sugar, and an apparatus for carrying out the process, refined crystalline sugar is pulverized in a disintegrator positioned above a discharge hopper having filter walls to allow air to escape, the pulverized sugar being passed from a discharge hopper of the disintegrator into a fluidization unit in which the sugar is subjected to fluidization with air. Fluidization is then stopped, and the sugar is discharged. |

A method of increasing the flowability of brown sugar, which facilitates packaging of such sugar, which involves freezing a brown sugar mix within a range of from -50*C. to -10*C., preferably to about -20*C. to establish a brittle and hard frozen consistency. The hard frozen brown sugar is then subjected to a size reduction action to establish a grain size approximately the same as in the brown sugar before freezing. An end product is attained which has a bulk density of about 41 pounds per cubic foot and has free-flowing properties to facilitate packaging.

PURPOSE: To produce a spheroidal crystal sugar having unique shape and size and high uniformity by bringing an amorphous sugar into contact with a non- aqueous sugar-insoluble liquid and water to crystallize the amorphous sugar containing water at a ratio to give a polycrystalline crystal structure having nearly spherical shape.
CONSTITUTION: A sugar-containing raw material such as granulated sucrose is supplied to a spinning apparatus and subjected to a shear processing by the high-speed spinning with a spinning head to cast the sugar outward. The volume of the obtained amorphous linear fiber is decreased by breaking the fiber into smaller fragments by a high-speed mixer and the amorphous fibrous sugar is brought into contact with a non-aqueous sugar-insoluble liquid (e.g. ethanol) and water using the water at a ratio and amount to give a polycrystalline structure having a nearly spherical shape. The objective new spheroidal crystal sugar having unique shape and size and high uniformity can be produced by this process.
