CONSTITUTION: An emulsion is prepared from a material mainly consisting of food oil (animal or vegetable oil or their processed product), milk protein such as defatted dry milk and/or vegetable protein such as soybean protein, an emulsifier such as glycerol fatty acid ester and water. Further, to the resultant emulsion, are added, as essential ingredients, 0.2W6wt% aminoacids and 3W 40wt% saccharides to give the objective oil-in-water type emulsion. The aminoacids used in the invention are obtained from naturally occurring proteins, by fermentation or synthesis. An example of the saccharides is glucose, fructose, maltose or sorbitol.
