PURPOSE: To reduce a cost for manufacturing cheese by manufacturing rennet cheese from material milk, separating it into cheese and whey, dividedly taking modified cheese dust, purifying it by a specific method and then mixing it into the material milk. CONSTITUTION: The material milk is purified to remove contaminant and to standardize, carried into a cheese manufacturing device to manufacture rennet cheese, and separated into cheese material and whey to separate modified cheese dust from whey. Then this cheese dust is acidified in whey or water to dissolve calcium to separate modified protein from whey. Next, cheese dust is suspended to water, etc., and heat-processed at 40 to 60°C in 5 to 10min, and pH is made to be 6.5 to 7 by 10% neutralizer and heated to 80 to 90°C in 1 to 15min. Then obtained purified cheese dust is mixed into material milk in order to increase the protein content or the dried object mass of material milk to effectively recycle. PURPOSE: To easily obtain milk having low phosphorus content and suitable as a drink for aged person, by coagulating and separating casein from milk, precipitating phosphoric acid in the remaining milk whey as Ca salt, adding the separated casein to the whey and emulsifying the mixture. CONSTITUTION: Milk is added with an acid and/or rennet and coagulated casein is separated. The remaining milk whey is added with a calcium salt (e.g. calcium chloride) to precipitate free phosphoric acid in the whey in the form of calcium phosphate having low solubility. The solution produced by removing the precipitate is added with the casein separated in the first step to obtain a mixture containing 1W2g of phosphorus per 100g of protein. The objective milk having low phosphorus content is produced by emulsifying the mixture. Only the phosphorus component in milk can be selectively decreased to enable the preparation of low-phosphorus milk without decreasing the contents of other nutrient components. The invention relates to a whey protein product having a ratio of whey protein to casein in the range from about 25:75 to about less than 50:50, a total protein content of at least 20% on dry matter basis, and a protein content of about 2.5 to about 8% by weight, based on the weight of the product. The product has a favourable amino acid composition and is especially suitable for athletes. The invention also relates to a method for producing a whey protein product, using microfiltration and ultrafiltration. The whey protein product is composed of the ultrafiltration retentate and a casein-containing material at a ratio of whey protein to casein of about 20:80 to about less than 50:50 and a total protein content of at least about 20% on dry matter basis.

The present invention includes a method to produce immune-active milk products from raw milk. The method includes the steps of separating a raw milk composition into a nonfat milk fraction and a fat fraction, followed by UV-C pasteurization of the nonfat milk fraction to yield the immune-active milk product. Optionally, a composition comprising milk fat globule membrane components is added to the nonfat milk fraction either prior to or subsequent to the UV-C pasteurization step. Optionally, the nonfat milk fraction is treated with lactase to hydrolyze the lactose. The method can also optionally include a step of low-temperature drying of the immune-active milk composition, or alternatively ultrafiltration and/or diafiltration can be used to produce a milk protein concentrate as the immune-active milk products. The immune-active milk products obtained by the methods of the invention can be used to reduce, prevent or treat immune dysfunctions.

A process and system is shown for obtaining a dry milk formula, having (a-i) ultrafiltration of an animal skim milk composition having 70-90 wt % casein and 10-30 wt % whey proteins, based on total protein, and (a-ii) ultrafiltration of an animal whey composition having 0-25 wt % casein and 75-100 wt % whey proteins, based on total protein; or (a-iii) ultrafiltration of a mixture of the compositions of (a-i) and (a-ii), (b) removing polyvalent ions from the UF permeate originating from step (a-i) and/or (a-ii) or (a-iii) to obtain at least one softened UF permeate; (c) combining the at least one softened UF permeate with a UF retentate to obtain a combined product; and (d) drying the combined product to obtain a dry milk formula.
