PURPOSE: To obtain edible emulsified powder fat excellent in oxidation resistance especially under a rising temp. condition by forming a stable liquid conc. emulsion containing fat globules having hydrophilic coating and adding a hydrophilic film forming material to this emulsion before drying the emulsion.
CONSTITUTION: An aq. dispersion containing edible fat, a hydrophilic film forming material, carbohydrate and water is emulsified to form a stable liquid conc. emulsion containing fat globules coated with the film forming material (a) and the hydrophilic film forming material is added to this liquid conc. emulsion in the amt. equal to that contained in the aq. dispersion (b). Subsequently, the conc. emulsion is dried to obtain an objective powder emulsified fat product. As the optimum film forming material as the hydrophilic film forming material to be used, a substance having good film forming capacity on an oily surface, low hygroscopicity, low viscosity and a property unnecessary for adding a separate emulsifier to the dispersion, for example, a protein hydrophilic substance (e.g; calcium casein, gelatin) or hydrophilic colloid (e.g; gum arabic) is designated.

PURPOSE:To prevent a bad influence from exerting on taste, aroma, texture, etc., of a food, by regulating moisture content to <=15wt.%, particle diameter to <=10mm at the maximum and average particle diameter to <=5mm and angle of repose at <=70 deg.. CONSTITUTION:Cacao butter melted in a warm bath at about 45 deg.C is thoroughly kneaded with about 70pts.wt. dextrin (DE=3.5) and about 4.5pts.wt. glycerol is then added. The resultant blend is subsequently mixed, stirred at about 45 deg.C for about 10min for homogeneous diffusion, powdered and granulated. The moisture content of the resultant powdery fat and oil is about 6.5% and the average particle diameter is about 700mum with about 44 deg.. angle of repose without any exudation of the fat and oil. Fluidity as the powdery and granular substance is excellent and constituent components, such as seasoning or cake mix, etc., themselves can be used as a fat and oil-containing substrate. As a result, there is no fear of adversely affecting taste, aroma, texture, etc., of a food utilizing the above-mentioned fat and oil. |

PURPOSE: To easily prepare a high quality dehydrated article without lowering the quality of foods of medicines, by containing anhydrous lactitol to a water- containing substance to convert the same to a lactitol hydrate crystal.
CONSTITUTION: Anhydrous lactitol is contained in a water-containing substance such as foods, medicines, cosmetics or stock materials thereof and changed to a lactitol hydrate crystal to perform dehydration. Anhydrous lactitol is substantially anhydrous one and develops strong dehydrating action when is converted to the lactitol hydrate crystal and the moisture thereof according to a Karl Fischer's method is pref. below 3w/w% or less and the pref. addition amount thereof is 0.0W500pts.wt. of 1pt. of the water-containing substance. This method can be especially advantageously adapted to the dehydration of organs, tissues or cells derived from an animal, a plant and a microorganism.
