PURPOSE:To enable an efficient increase in temperature while keeping physical properties of butter before modification by pulverizing massive butter in a low temperature state and extruding the pulverized butter while kneading, deaerating, heating and compressing the butter. CONSTITUTION:The aforementioned apparatus for modification is provided with a continuous type twin-screw extruder 2, a constant rate feeder 3 and a deaerator 4 installed on a frame 1. The constant rate feeder 3 is used to feed pulverized butter charged to a hopper 5 through a chute to a raw material charging port 6 of the continuous type twin-screw extruder 2 at a constant rate. Since adhesion of the pulverized butter is increased at >=-15 deg.C and butter particles are agglomerated to make the constant rate feeding difficult, a jacket 7 is provided on the hopper 5 and chute to circulate brine at <=-15 deg.C. The outer periphery of a barrel 11 is equipped with jackets 16 having a structure with feed ports 17 and discharge ports 18 of a heat exchange medium so as to enable circulation of the heating exchange medium.
