The connector opens into the nozzle chamber such that a cyclonic flow of the fed cleaning medium and/or drying medium can form in the nozzle and exits the nozzle. The cyclonic flow transports dirt particles from the cavity in the workpiece to the opening for discharging dirt particles and cleaning medium and/or drying medium.

An apparatus for portioning and kneading pieces of dough has a rotatably mounted drum driven for continuous rotational movement and provided with a plurality of receiving openings for the dough to be kneaded. Disposed above the drum is a kneading tool formed by an endless band guided over two guide rollers, however, spaced apart a predetermined distance from the periphery of the drum. The band is mounted on a support member which is shiftably supported on a profiled shaft in the longitudinal direction thereof and is driven to a reciprocating movement. The band carries out a circular movement for carrying out the kneading process on the dough pieces positioned in the receiving openings. Since the band moves with the drum, a long period of time is available to carry out the kneading process.

Further, the dough piece may pass over a fluidized bed as it is transferred from one pair of sheeting rollers to a following pair of sheeting rollers.The invention also includes an arrangement for replacing the usual feed hopper of a dough panner by a conveyor, a fluidized bed and lateral locating devices for the dough piece.

A method and apparatus for the production of molded meat or meat-like products, for example sausages. The surface of the product is treated with a fluid, which could be for coloring or flavoring purposes, but is advantageously e.g. an edible acid adapted to react with protein in the product to form a cohesive surface and enable the use of a separate skin to be avoided. The mold includes a permeable wall, for example of sintered stainless steel, through which the fluid can be introduced. In a preferred embodiment the wall is defined by a hollow cylinder disposed in a non permeable housing containing the fluid. An end cap closes one end of the cylinder and a plunger compresses the material to form the product. At the same time additional fluid is injected through a nozzle into the housing, to cause a corresponding quantity of fluid to pass through the cylinder wall and treat the surface of the product.
