The forming plates (11, 13) at least opposed sloped surfaces (18B, 22B). The sloped surfaces are tilted outward from the lower side to the upper side so that the gap between the sloped surfaces is narrow on the lower side and wide on the upper side. The rounding device rounds the food dough using the sloped surfaces (18B, 22B) of the pair of the forming plates (11, 13). The pair of the forming plates (11, 13) has longitudinal components which move longitudinal relative to each other in the opposite directions, and the pair of forming plates (11, 13) also has a lateral component which move relative to each other in the width direction perpendicular to the longitudinal direction so as to approach and separate from each other. The pair of forming palates (11, 13) can move along a movement path in which the distance of movement according to longitudinal components is greater that the distance of movement according to the lateral component.

A roller with an outer face and moving groove is positioned against the stationary shoe's inner face and stationary groove to define a rolling cavity, one half of the rolling cavity being formed by the stationary groove and another half of the rolling cavity is formed by the moving groove. A funnel assembly positioned adjacent to the roller, along with a beveled entry wall at the entry end of the stationary groove, guide dough units into the rolling cavity.

In this way, only simple mechanical components, such as linkage rods (7) and connection elements (8) are positioned close to the rollers and these components are moved by manual adjustment or by means of suitable actuators positioned outside the aggressive environment close to the rollers of the extrusion mill.

A kneading drive gear actuates the driving motions of the three drive components, derived from the motion of a single transmission shaft. The result is an easily adjustable kneading drive which can be adapted in particular to the size of the kneading compartments, the size of the dough pieces or the dough recipe.

This is accomplished in the apparatus by operating the divider at half-speed and by dispensing doughballs two at a time, alternately from the outer two chutes by opening the outer two sections of the infeed gate and from the inner two chutes by opening the central section of the infeed gate.

This disclosure is directed to an apparatus to process pizza dough. The apparatus includes a platform to support the dough to be processed, and further includes a platen having finger-like projections positioned to operatively come in contact with the dough. The platform and platen are caused to oscillate relative to one another along an axis perpendicular to the dough support surface, and also move rotationally relative to one another in a plane parallel to the dough support surface. The motion of the platform and platen is in a predetermined timed relationship to cause the projections to engage and process the dough.
