CONSTITUTION: The culture madium taken out of the cultivation tank 1 is sent to the pasteurizer 2 where it is treated with a chemical. The pasteurized culture medium is introduced into separator 3 where killed microorganisms and the chemical is romoved, preferably by use of washing water 8. The remaining yeast is sent to reactivator 4 to reactivate the yeast deactivated by the pasteurization treatment and is combined with nutrients or aerated with pipe 6, when it is cultured aerobically, then made to return to the tank 1. The reactivation is effected under conditions that the pH is 4W8 and the time is longer than 10min.
