CONSTITUTION: The titled flavor composition is prepared by emulsifying or solubilizing a water-insoluble or hardly soluble flavor such as linseed oil, cinnamon oil, garlic oil, etc. with a polyhydroxy compound (e.g. glycerin, sorbitol, sucrose, etc.) or its aqueous solution in the presence of proteins, decomposed proteins (e.g. meat powder, sodium caseinate, yeast extract, etc.) and/or a surface active agent (anionic, nonionic, cationic, amphoteric surface active agent, etc.). The obtained flavor composition is suitable as a flavor of perfume, soap, refreshing drink, liquor, etc.
