A method of manufacturing dry powder of fermented mare's milk(horse milk) by inoculating mare's milk with a strain containing lactic acid bacteria and kefir grain, fermenting and then spray drying is provided. The method enhances distribution properties and preservation time of mare's milk and provides lactic acid bacteria and kefir bacteria to the mare's milk. Mare's milk is inoculated with 1 to 25% by weight of a strain containing lactic acid bacteria and kefir grain and fermented at 32 to 45deg.C for 10 to 18hr. The fermented material is spray-dried with a spray drier in a state without pretreatment or after treatment of the fermented material. The inlet temperature of the fermented milk is 20 to 40deg.C. The spray drier has a temperature condition of an inlet temperature of 20 to 40deg.C, hot air temperature of 160 to 180deg.C and outlet temperature of 60 to 90deg.C.

The protein concentrate is solublised before being recombined with the serum. The mono-di-valent cation content of the protein conentrate may be adjusted as the protein concentrate is solublised. The ingredient produced can be used in the manufacture of cheese products.

The vapor is condensed by cold water and the condensed water is supplied to the ground through the pump. In summer, the atmospheric heat is used for heat exchange in the evaporation chamber and the terrestrial cold is used for condensing. In winter, the terrestrial heat or seawater heat is used for heat exchange in the evaporation chamber and the atmospheric cold is used for condensing.
