CONSTITUTION: 70W98pts.wt. saccharified denaturated starch having 5W20 DE value and ≤10wt% water content is blended with 30W2pts.wt. natural or artificial spice (preferably raw coffee beans, or coffee oil), 100W235pts.wt. water, and a small amount of an emulsifying agent, treated at 30W70°C, flavor is adsorbed and included in the saccharified denaturated protein, and the starch is dried (preferably spray drying method) to give a carrier composition for enhancing coffee flavor. 2W10pts.wt. carrier composition for enhancing coffee flavor is blended with 98W90pts.wt. instant coffee powder or a corresponding amount of stock solution before drying, and optionally pharmaceutically manufactured to give a food for instand coffee having enhanced flavor.
