CONSTITUTION: Starch is saccharified, denatured, partially converted into dextrin to give a saccharified and denatured starch having 5W20 DE value and ≤10wt% water content. A mixture of a given fragrant component and a stabilizer is adsorbed on the saccharified and denatured starch or included in it, spray-dried, so that the surface is made into a film (capsulated), and particles are prepared to give a carrier composition. 2W20wt% of the composition is added to a food. The mixture of 5W30wt% fragrant component and 95W70wt% stabilizer (vegetable oil and propylene glycol) is blended with 2W30wt% saccharified and denatured starch.
