CONSTITUTION: A raw material protein is heated under pressure and extruded with an extruder furnished with a slit die at the front cylinder wall to obtain a flat raw material protein in the form of a flake of 1W3mm in thickness and about (10W30mm)×(20W50mm) in size. The protein is seasoned with soy sauce, MIRIN (a sweet Japanese wine used as seasoning), sugar, ginger, MISO (fermented bean paste), etc., and dried to a water-content of ≤10% by hot air, micro-wave irradiation, etc. The ingredient obtained by the process has a dense fibrous structure tearable along a definite direction. It has close resemblance to meat in appearance and palatability, and can be prepared at a low cost.
