CONSTITUTION: Sorbic acid powder (S) having an average particle size of 90W 250μ is dispersed in 0.5W1.2 times the amount of S of a molten polyhydric alcohol ester of a fatty acid, e.g. hardened rapeseed, castor, and beef tallow oils, stearic acid or palmitic acid monoglyceride, or sorbitan monostearate, and slowly cooled with stirring.
EFFECT: Simple granulating operation and no special technology is required due to the use of a slurry free from fine powder. The texture of the boiled fish paste product made from the coated soribic acid as a preservative is not lowered because of a small amount of the coating material.
