PURPOSE: To effectively prevent contamination of a heat-treated food with undesirable bacteria by heat treating a processed food product such as frankfurt sausage and then treating the surface of the food with lanthionine-bacteriocin. CONSTITUTION: After a processed food product such as frankfurt sausage is heat treated, the processed food product is dipped in an aq. soln. containing lanthionine-bacteriocin (e.g. nisin). Thereby, contamination of a heated and processed food with pathogenic bacteria such as Listeria monocytogenes and putrefactive bacteria can be prevented. This method gives such an effect that when the sausage after treated is dipped in a soln. prepared by diluting an overnight culture of Listeria monocytogenes with 25mM citric acid buffer soln. having 6.0pH and then packaged in vacuum and stored at 4 deg.C for 21 days, the number of cells of Listeria monocytogenes is largely decreased. Thus, contamination of a heated and processed food with undesirable bacteria can be prevented. |

PURPOSE: To increase durability for more than several months under a general refrigerating state by bringing a surface of meat into contact with powder sugar and flowing out a formed extracted liquid from the meat.
CONSTITUTION: Meat is covered with sugar and placed on a proper supporting body capable of draining a formed extracted liquid. The supporting body is made of polyamide or can be a sieve which is advantageously made of another harmless plastic from the viewpoint of the food industry. Sugar is not required to be put on the whole surface of meat. Even when meat is cut to one smaller dimensional piece being remarkably than the other two dimensions, for example, to a stake-shape, the sugar is good to be put on the upper surface. The sugar permeates into a meat tissue and then, the meat is remained as an extract. Even if not only a part of moisture but also various kinds of harmfull substances such as organic acid or a PCB compound (a polychlorinated biphenyl kind) exist during processing, they are partially removed from the meat together with the extracted liquid. The processing requires 12-72 hours.

CONSTITUTION: This method consists in lessening the contamination of the slaughtered chicken bodies with the bacteria, such as salmonellae and campylobacter, sticking to the skin surfaces of the slaughtered chicken bodies or forming colonies thereon. in the following manner: The slaughtered chicken bodies are brought into contact with the aq. acidic pH soln. contg. the anionic surfactants of the effective amt. selected from among the 8 to 18C alkyl sulfate, benzenesulfonic acid having preferably one or more 1 to 15C alkyl substituents, naphthalenesulfonic acid having preferably one or more 1 to 15C alkyl substituents and their salts. The pH of this aq. soln. is particularly preferably about 1.5 to about 2.5. The amt. effective for the surfactants to decrease the salmonellae is particularly about 100 to about 300ppm. The sterilization may be preferably executed at about 0 to about 60 deg.C. |
