PROBLEM TO BE SOLVED: To obtain a food and drink treated with a 4-substituted resorcinol derivative effective for inhibiting the oxidation browning of food and drink, especially the enzymatic oxidation browning caused by PPO activity.
SOLUTION: The objective food or drink is obtained by treating a food or drink with a 4-substituted resorcinol derivative of an amount sufficient for preventing or inhibiting the browning of the food or drink liable to cause the browning by an enzyme.

PROBLEM TO BE SOLVED: To produce a resorcinol polyamine derivative by reacting 7- hydroxycoumarin with hydrogen under a specific condition and reacting the produced 7-hydroxydihydrocournarin with diaminobutane under a specific condition. SOLUTION: The objective compound of formula I can be produced by reacting 7-hydroxycoumarin with hydrogen under a condition sufficient for proceeding hydrogenation and reacting the produced 7-hydroxydihydrocoumarin with diaminobutane under a condition sufficient for producing the objective compound of formula I. The resorcinol polyamine derivative may include the compounds of formula II and formula III as preferable examples. These compounds are effective for inhibiting the oxidation browning of foods and drinks, especially the enzymatic oxidation browning caused by polyphenol oxidase(PPO) activity. |

Meat and poultry portions, such as chicken breasts, are marinated uniformly with standardized quality and various conditions encountered in the manufacturing process, such as meat texture and moisture variations and different temperatures, pressures, etc. in the marinating procedure. This is achieved by mixing a batch of raw products in a marinade to pass the products periodically out of the marinade through reduced from atmospheric pressure air. The meat and the marinade are simply metered to provide a perdetermined amount of marinade, such as 10% by weight, to be absorbed by the meat. The meat is then simply mixed or agitated with the marinade until all the marinade is absorbed. Thus, every batch under every condition will have the same amount of marinade in each part. Similarly, a coating of mixture of dry powders is applied to the moistened surface of the marinated products to produce a uniform thin coating adhering to the surface. Flavourings and spices are in the coating mixture for achieving product taste, and sugar solids to achieve a product appearance. Thus, the coating is baked on as an elastic rubbed adhering coating that remains through cooking, freezing and reheating cycles. The baking cooks the products and colors the coating to the appetizing an pleasant appearance similar to roasted meat, even when reheated in a microwave oven. |

PURPOSE: To retain freshness for a long period and prevent browning on the surface of a food by adding a specific natural vegetable extract solution to a food, packaging the resultant food in a packaging paper having far infrared emitting and ethylene gas adsorbing action and preserving the food at a low temperature.
CONSTITUTION: A 0.1-1% aqueous solution of a natural vegetable extract solution containing flavonoids (e.g., catechin) extracted from mulberry or green tea or polyphenols (e.g., chlorogenic acid) is prepared and a food (e.g., ham or sausage) is dipped therein, etc., packaged in a packaging material obtained by adding a far infrared emitting ceramic consisting essentially of SiO
