Kühlzone (A1) wird als Rückluft dem Zuluftsystem beigemischt, wobei in den Schwelkzonen (A und B) durch den Grad ihrer Beladung mit Malz, die Ausbildung der Hordenfläche und/oder durch Einstellung des Volumenstroms, der Temperatur bzw. des Feuchtigkeitsgehalts der Zuluft jeweils unterschiedliche Schwelkzeiten derart erreicht werden, daß während des Abdarrens in der Abdarrzone (A1) stets ein Schwelkvorgang in mindestens einer Schwelkzone (A oder B) stattfinden kann und jede einzelne Zone (A, B und A1) lufttechnisch getrennt von den anderen betrieben wird. Die Hordenfläche einer Einhorden-Darre (12) ist durch Trennwände (26) in drei Zonen (A, B und A1) aufgeteilt, die Luftversorgung ist so ausgebildet, daß die Abluft zonenweise unvermischt abgeführt wird. Die Trennwände (26) sind derart angeordnet, daß jede Zone (A, B und A1) eine Be- und Entladeeinrichtung (14) aufweist oder sich in den Bereich der Be- und Entladeeinrichtung (14) bewegen kann.

Germination of cereal grain in malting is carried out by passing steeped grain to and through a series of six closed spaced discrete vessels in succession. The grain is maintained in each vessel for about a day and in each vessel is subjected to an upward flow of humidified attemperated air. The grain is turned either in a vessel or through transference to the next vessel. Transference from one vessel to the other is carried out by discharging the grain from each vessel along a lower conveyor to an elevator which raises the grain to an upper conveyor that discharges the grain down into the next vessel. Grain leaves the last vessel of the series as green malt and then passes to a malt kiln where it is dried to a desired moisture level.

Apparatus for malting barley including an elongated germination compartment and a plurality of vertically extending, transversely spaced augers moveable longitudinally within the compartment for intermittently mixing the barley during the germination period. To remove the malted barley from the germination compartment, the compartment floor includes a centrally positioned, longitudinally extending opening. A plurality of longitudinally spaced pairs of gates are pivotably mounted within the floor opening; the gates comprising each pair are pivotally attached to opposite edges of the opening for pivotal movement between a generally horizontal floor-forming position closing the opening and a downwardly inclined position allowing the malt within the compartment to pass through the opening to suitable means (e.g. a conveyor) for transporting the malt to a drying kiln. A transversely extending auger is removeably mounted immediately behind the vertically extending augers and adjacent the compartment floor for moving the barley transversely within the germination compartment toward the centrally positioned floor opening during the compartment unloading operation. Pneumatic switches are positioned along the side of the germination compartment to automatically and independently pivot (i.e., open) the floor gates at successive predetermined positions of the transversely extending auger.

A positive displacement volumetric discharge mechanism of the screw auger conveyor type. A series of radially disposed conical screw type augers and underlying retarder plates substantially close the lower end of an annular chamber of a vertical shaft kiln. The augers are rotated to convey solid materials from a bed of such materials in the kiln chamber radially outwardly to an annular discharge throat. The conical augers are formed so that the volume of material conveyed increases with the radial distance from the center of the kiln in order to maintain a constant and uniform downward flow of solid materials throughout out the cross section of the kiln.

A malting vessel has a vertical tube set within it, with its ends spaced from the top and bottom of the vessel, and there is a feed screw or a gas stream active in the tube so that a circulation of contents may be set up throughout the vessel, at will. Air or other gas at controlled temperature, humidity and pressure can be injected into the vessel at any time. When a feed screw is used it preferably has a special construction, with a conically flared lower end, the pitch of the screw in this region being progressively inversely proportional to its diameter. A novel method of malting involves the setting up of a circulation of grain in a vessel in such a way that part of the grain batch is rising while another part is falling, gas being optionally injected at least into the part of the circulation where grain is falling.
