CONSTITUTION: A dispersion of soybean milk prepared from uncracked soybean or defatted soybean by the conventional method or separated soybean protein obtained from the soybean milk is adjusted to pH6.5W7.5, and heated at a temperature of 115°C or above for a suitable time, e.g. 115°C for 30W60min, 120°C for 5W20min or 130°C for 1W2min, to denature the soybean protein suitably and then cooled to 100°C or below, and mixed with an adequate amount of glucono-δ-lactone or a salt, e.g. a calcium salt, and filled into a heat-resistant container and heated at a high temperature of 110°C or above under high pressure.
