CONSTITUTION: Extraction residue of soy milk prepared from soybean or defatted soybean, is pulverized to powder which passes through a 30-mesh sieve at the water-containing state. The powder is mixed and kneaded with β-starch composed mainly of corn starch. After converting the β-starch to α-starch if necessary, the mixture is formed, dried, and left at rest to regenerate to the β-state. The resulting dough containing 45W65% of water is fried and expanded in oil to obtain the objective snack cake.
