CONSTITUTION: KONJAK powder is dispersed in water, and mixed with an alkali metal compound such as sodium hydroxide, potassium carbonate, sodium secondary phosphate, sodium bicarbonate, etc. Calcium hydroxide is added to the mixture, and the objective KONJAK gel is obtained by coagulating the mixture with heat. The KONJAK gel thus prepared has partly contracted heterogeneous texture, which results in a unique feeling to the teeth and the capability of rapid impregnation of seasoning liquid in the gel when boiled in the seasoning.
