The present invention provides a cheese slicer adjustable for slicing cheese in variable thicknesses, comprising a handle; a guiding plate pivotally connected to the handle; a slicing plate having a slicing blade, wherein the slicing blade and the guiding plate together define a gap as slice thickness; a linkage movably resting against the guiding plate so that the movement of the linkage enables the guiding plate to pivot around the handle relative to the slicing blade thereby to provide variable slice thickness for the item to be sliced; an actuator assembly in operative connection with the linkage to move the linkage on the guiding plate. The cheese slicer of the present invention further comprises an indicating mechanism to clearly indicate the selected thickness of the sliced cheese.

A kitchen knife device designed to cut food includes a handle and a blade connected to an end of the handle. An adjustment mechanism is operatively connected to a spacer, wherein the adjustment mechanism and spacer are connected to the handle. The adjustment mechanism includes a rotatable dial that causes the spacer to move relative to the blade, thereby adjusting the distance between the spacer and blade for allowing the user to selectively adjust the thickness of the slice being removed.

Each handle and blade assembly includes a blade member secured to a handle member. The connector and guide assembly includes spaced guide pin members operably connected to the adjacent first and second handle and blade assemblies to control the respective lateral movement thereof. The actuator assembly includes an actuator wheel assembly connected to and mounted between the first and second handle and blade assemblies and an actuator lock assembly mounted in one of the handle members. The actuator wheel assembly includes an actuator member that is rotatable to selectively move the first and second handle and blade assemblies toward or away from each other. The actuator lock assembly includes a lock member selectively engagable with the actuator member to prevent rotation thereof to lock the first and second handle and block assemblies in a selected spaced relationship. Numerous types of blade members may be provided depending on the desired cutting operation to be performed.
