A fill system for use in a packaging machine is disclosed for filling a container with a primary and a secondary product. The fill system includes a primary pump system (80) for pumping a predetermined amount of the primary product received at an inlet thereof to an outlet thereof. A primary fill pipe (180) having an outlet overlying a container processing path (45, 50) along which the containers are filled and sealed by the packaging machine is connected to receive the predetermined amount of primary product from the outlet of the primary pump system. The container processing path lies generally perpendicular to the primary fill pipe. A nozzle (200) is connected at the outlet of the fill pipe. The fill system further includes a secondary pump system (100) for pumping a predetermined amount of the secondary product received at an inlet thereof to an outlet thereof. A secondary fill pipe (185) is connected to receive the predetermined amount of secondary product from the outlet of the secondary pump means. The secondary fill pipe is concentrically disposed in the primary fill pipe and has an outlet that likewise overlies the container processing path. A valve mechanism (215) is disposed, for example, concentrically within the secondary fill pipe and includes a sealing member positioned at the outlet of the secondary fill pipe. The sealing member is operable to control the flow of the secondary product from the secondary fill pipe. A continuous process is described for preparing a powdered food product comprising adding a fat phase to an aqueous phase, to produce an emulsion, evaporating the aqueous phase in a plurality of evaporator effects and finally spray-drying the emulsion, the fat phase being added to the liquid aqueous phase and homogenised between two evaporator effects or between the last evaporator effect and the spray-drier. The process does not require storage of the emulsion upstream of the spray-drier and results in a microbiologically stable product, with minimum fat degradation. The emulsion is produced by measuring the density, the flow and optionally the temperature of the aqueous phase prior to the addition, as well as flow and optionally the density and/or the temperature of the fat phase prior to the addition, and feeding the combined measured values to a metering unit and metering the fat addition according to a predetermined ratio between fat phase and aqueous phase in the food product. | ||||||

The object of the invention is the standardised preparation of cheese. In the process the milk is skimmed, the separated cream is treated ultrasonically or in a ball mill or a venturi pipe or an atomiser, the fat content of the basic milk is adjusted with the treated cream, the milk is cold-ripened and then cultured after heating to the rennet-treatment temperature, any additives added, rennet-treated as required and then, after the start of coagulation, reduced, heated, separated from the whey, shaped as required, pressed, salted and ripened and the product obtained is packed. For this purpose the cream is treated by ultrasonic waves, ball milling, venturi pipe or atomiser. The cream is treated ultrasonically or in the ball mill or in countercurrent within the venturi pipe or in the atomiser to ensure distribution of the fat molecules in the cream in such a way that the diameter of the balls of fat in the milk is reduced to under 2.5 microns. | ||||||

La présente invention a pour objet un procédé pour la préparation standardisée de fromage. Selon ce procédé, le lait pour fromage est écrémé, la crème séparée est traitée par ultrasons, broyeur à boulets, tube de Venturi ou atomiseur, la teneur en matière grasse du lait de base est ajustée avec la crème traitée, le lait est porté à maturation à froid, puis mis en culture après avoir été chauffé jusqu'à la température d'emprésurage. Le cas échéant, on y ajoute des additifs, puis selon les besoins, le lait est présuré, et, une fois sa coagulation achevée, il est broyé, chauffé, séparé du petit lait, moulé selon les besoins, pressé, salé, mis à maturer; le produit ainsi obtenu est ensuite emballé. A cet effet, la crème est traitée par ultrasons, broyeur à boulets, tube de Venturi ou atomiseur. Pour assurer la répartition des molécules de graisse, elle est traitée par ultrasons, ou dans le broyeur à boulets, ou à contre-courant dans le tube de Venturi, ou dans l'atomiseur pour réduire le diamètre des globules gras contenus dans le lait à moins de 2,5 microns. | ||||||

Described is a process for the production of milk and cream with a predetermined fat content, in which raw milk is separated by a centrifuge into a high-fat fraction (cream) and a low-fat fraction (skimmed milk), in which the fat content in the hight-fat fraction is determined and the fat content in the low-fat fraction is kept at a negligibly low level, the volume flow of the low-fat fraction is determined, and a specific part of the high-fat fraction is then added to the low-fat fraction for obtaining milk of the desired fat content (standardized milk), and the remaining part of the high-fat fraction (cream) is drained off through a control valve (8), which is characterized in that the part of the high-fat fraction added to the low-fat fraction is regulated by means of a control valve (12) which in conjunction with the control valve (8) for discharge of the remaining part of the high-fat fraction is controlled on the basis of the volume flow (10) of the low-fat fraction, on the basis of the volume flow (11) of the part of the high-fat fraction added to the low-fat fraction, and on the basis of the density measurement (7) of the high-fat fraction, in such a way that the density of the high-fat fraction - and thus the fat content - is maintained at a set volume.
