PURPOSE: To prevent fracture in a spread without modifying protein by low temp. pasteurization by mixing a water phase containing a nonmodified whey protein and fat phase, cooling the mixture and working.
CONSTITUTION: A nonwhey protein by 0.5 to 10.0wt.% is mixed with 20 to 65wt.% dispersed viscosity enhanced aqueous phase having pH 4.5 to 5.5 which may contain a small amt. of casein if necessary, and 80 to 35wt.% fat phase to obtain a mixture. The mixture is cooled and worked to obtain a water-in-oil emulsion spread having 0 to 20wt.% lactose content in the water phase of the whole protein content.

PURPOSE: To obtain a butter with low fat amt. and good spreading property by adding concentrated natural lactic acid to a high-grade butter or table butter after homogenization, adding alkali and/or alkaline earth caseinate, mixing and kneading.
CONSTITUTION: High-grade and/or table butter having ≤60wt.% butter fat content as the finish product standard is controlled to 15 to 25°C treating temp. and beaten with cutting blades which are driven by high shearing force in a tightly sealed machine. Then a first water phase containing 2 to 8wt.% concentrated natural lactic acid calculated as the final product is added. This natural lactic acid has a buffer effect to control the water phase of the finish product to 5 to 6.5 pH. Then a second water phase containing alkali and/or alkaline earth caseinate by 4 to 10wt.% as the finish product is added. These components are completely mixed by sufficiently kneading to cause about 3 to 5°C temp. increase due to frictional heat.
