CONSTITUTION: Soybean curd to be fried is placed on a conveying plate 1a by the conveyor 1 and cut by the cutter 11 into pieces ready for being fried 12. The plate 1a is sent to the position for dehydration and suction where the sucking box 5 moving integrally with the frame 3 comes down to the surface of the soybean curd by the operation of the lifting cylinder 4 mounted on the shaft 2. The box is provided with an air-permeating cover cloth at the bottom of its inside and the water is sucked from the box 5 through through-holes 5b, path 5c and pipe 8 to the blower 9 along with air to effect the dehydration. Thus, dehydration is automatically and rapidly conducted to a satisfactory level to prevent the splash and deterioration of frying oil and to shorten the frying time.
