CONSTITUTION: Raw round soybeans washed with water are kept in hot water at 85W90°C for about 1min so that they absorb water about 1/4 their own weight and are softened. They are ground together with lime water to give go (slurry) with a pH about 7.4. It is kept untouched for several minutes so that it absorbs water completely. It is steamed and boiled at ≥100°C for ≥30sec, and the residuary substances are removed, to give soybean milk, from which tofu is prepared conventionally.
