CONSTITUTION: An aqueous solution of konjak mannan is coagulated with a gelling agent such as sodium carbonate, and the coagulum is formed in the form of entangled fibrous material having three-dimenaional network structure e.g. by loosening the coagulum with a conical horizontal crusher. The resultant food similar to powdered meat is added together with the gelling agent to an aqueous solution of konjak mannan, and coagulated and integrated to obtain the objective modified KONJAK. The water retainability of the final product can be improved by adding starch to the aqueous solution of konjak mannan, and the taste, etc. of the product can be improved by adding ground meat thereto.
