| 摘要 | Lecithins are frequently used in the food industry as a dispersing agent, but suffer from several drawbacks. Therefore, the inventors sought alternatives to lecithin. The invention relates to the use of carboxylic acid esters of mono- and di-glycerides for the improvement of the dispersibility of powdered products, in particular foodstuff components formulated as dry powders. Citric acid esters of mono- and di-glycerides are particularly preferred. | ||||||
