TO 230*F. TO INCREASE THE MALTINESS OF THE MALT AND PRODUCE A MALT WHICH WHEN USED IN BREWING GIVES A BEER OF HIGH FOAM FORMATION AND RETENTION, AND IMPROVED MALTY FLAVOR.
