CONSTITUTION: A concentrated liquid shortening prepared by compounding (A) ≥16wt% propylene glycol fatty acid ester, (B) ≥6wt% emulsifier consisting of glycerol fatty acid ester, its organic acid ester, sucrose fatty acid ester, sorbitan fatty acid ester, and/or soybean phospholipid, and (C) an oil or fat which is liquid at normal temperature. The total amount of the emulsifier in the composition is 22W70wt%. The oil or fat is preferably vegetable oil or fat from the viewpoint of taste, flavor and the like of the consumers. The oil has to be liquid at normal temperature, and is preferably rapeseed oil, soybean oil, safflower oil, etc., having a melting point of ≤0°C.
