Composition; glucose consisting mainly of β-1,3-glucoxy bond. Color; white. A water suspension is neutral. Specific properties; a water suspention gels thermally reversely at not lower than 75°C.
USE: Thicking agents for foods and cosmetic materials, shaping agents for medicines. Carcinostatic agents.
PROCESS: A solid substance obtained by decomposing a yeast fungus by enzyme is dissolved into an alkaline solution having a pH of not less than 12. The pH of the solution is made about 7W9 to precipitate a yeast glucan.
