Described is a mechanism for stripping by automatic turning of artichokes of different sizes in a machine for turning artichokes with intermittent alternating feed, comprising a conveyor which has a locking device wherein individual artichokes (59) are positioned manually between pairs of shaped jaws (57, 58) having elastic pusher means (56) positioned opposite each other for clamping the artichokes. The intermittent feed movement of the conveyor is temporarily stopped so that the artichoke to be processed arrives at a turning head equipped with at least one blade (1) designed to strip by turning the outer portion of the artichoke. The turning head is mounted on a hollow cylindrical body (9) rotating and movable with vertical translational in order to allow the gradual turning of the stalk of the artichoke; moreover, the at least one blade (1) is mounted on a slide (5) movable in horizontal translation along a wall (14) rigidly connected to the hollow cylindrical body (9), the slide (5) being equipped with manual adjustment means (18, 18A) for manually adapting the turning diameter of the stalk of the artichoke to an average size of artichoke to be processed. The mechanism also comprises mechanical means (33, 38, 36, 47. 46, 45, 43, 40, 39) and/or mechatronic means (33, 67, 69, 65, 64, 63, 62) for automatically measuring the diameter of the artichoke being processed and simultaneously adapting the working distance of the at least one blade (1) by translation of the slide (5) along the wall in such a way as to automatically strip by turning each artichoke on the basis of the actual diameter measured between the two jaws (57, 58) opposite each other.

An automatic device (10) for slicing artichoke hearts or cores (30) is assembled inside of a machine for the preparation of artichoke hearts starting from entire artichokes. Said machine is provided with a conveyor (20) having an intermittent movement and comprising jaws (21) for holding individual artichokes, as well as an automatic device (40) for milling the external portion of an artichoke heart, and an automatic device (50) for expelling the artichoke heart frome the holding jaws (21) towards a harvesting device. The slicing device (10) comprises a fixed rod (60) upon which an artichoke heart or core (30) is transfixed when it is expelled from said jaws (21), as well as a series of, rotatable circular blades (14) which are radially disposed around said rod (60) and which are simultaneously rotatable in order to cut the artichoke heart as transfixed by said rod into slices; said device (10) is assembled beneath said automatic device (40) for milling the artichoke heart.
