L'invention concerne un procédé et une installation de traitement d'un fromage; une spécialité fromagère à base d'un fromage ainsi traité et un produit alimentaire comportant cette spécialité fromagère. Procédé de traitement d'un fromage (F₁), qui comporte une première étape d'addition de protéines (P) au fromage (F₁) et une seconde étape, ultérieure, de traitement mécanique de mise en forme, caractérisé en ce que d'une part on sélectionne le fromage à traiter (F₁) parmi les fromages affinés ayant au moins 50% de matières grasses et plus spécialement parmi les fromages à pâte pressée,, les fromages fondus étant exclus; et, d'autre part, on sélectionne la nature des protéines (P) et les conditions de leur addition au fromage à traiter (F₁), de manière que les protéines (P), simultanément, soient au moins substantiellement solubles, aient un goût neutre ou lacté et remplissent essentiellement la fonction émulsifiante et peu ou pas la fonction gélifiante; et ce à une température modérée inférieure à la température de thermocoagulation, ce qui a pour effet, en combinaison, d'une part de permettre un traitement mécanique de mise en forme notamment par des techniques d'extrusion-formage, roulage-filage-pressage, extrusion-soufflage ou similaire, et, d'autre part, d'obtenir par le traitement un fromage traité (F₂) ayant une texture, un goût, une couleur substantiellement identiques à celles du fromage à traiter (F₁) et une forme spécifique résultant du traitement mécanique employé. |

Die Erfindung betrifft ein neuartiges Verfahren zur Herstellung von energie- und nährwerteingestellten und vorzugsweise kalorien-, fettund cholesterinarmen Milchzubereitungsprodukten sui generis und zwar ohne Verwendung chemisch bearbeiteter Ausgangsstoffe oder chemisch hergestelllter Zusätze. Bei der Herstellung der neuartigen Milchzubereitungen werden ursprüngliche Milch und/odereine Milchemulsion als Basiszutat und gegebenenfalls ein oder mehrere weitere Nährmittel als charakterisierende Zutat(en) verwendet. Diese Basiszutat und andere Zutaten werden in stark gekühltem oder gefrorenem Zustand verarbeitet. Die nach dem neuartigen Verfahren hergestellten Milchzubereitungsprodukte besitzen trotz der neidrigen Brennwerte (vornehmlich 80 bis 130 kcal) eine nährwertverbesserte und weitgehenst naturbelassene sowie vielseitige und ausgewogene Nährstoff- und Wirkstoffzusammensetzung, die weitgehenst im Aussehen, in Geschmack und in der Konsistenz den Vergleichbaren herkömmlichen Erzeugnissen entsprechen. Die Haltbarkeit wurde im Vergleich zu herkömmlichen Erzeugnissen verbessert. |
