CONSTITUTION: A rice cake material comprising rice flour, e.g. glutinous or nonglutinous rice, or 20wt% or less of waxy starch, wheat or potato starch, or wheat flour, is incorporated with 0.5W15wt% of natural vegetable oils, processed fats, animal fats and oils and/or 0.2W1.0wt% of a food emulsifying agent, e.g. a suger ester of a fatty acid, or lecithin, to give a rice cake by the conventional method.
