CONSTITUTION: 1pt.wt. of proteins composed mainly of vegetable proteins such as soybean protein, wheat protein, etc. having solubility, gel-forming capability and volatility, are mixed at least with 0.5W4pts.wt. of an edible oil or fat such as soybean oil, corn oil, rapeseed oil, beef tallow, etc. and 1.5W5pts.wt. of water, and the mixture is kneaded. If necessary, food additives such as seasonings, flavors, emulsifiers, etc. are added to the mixture during the kneading process. The kneaded product is deaerated preferably e.g. by evacuation, etc., and filled in a casing or a formed container. The content is left to stand at 0W60°C for ≥20min to effect the gelation and obtain the objective cheese-like food.
