CONSTITUTION: Xanthane gum (0.05W1%, based on the total amount of the aqueous phase) and concentrate of milk serum protein (0.2W5%) are added to the aqueous phase and oil phase of 3W6pH, containing an organic acid such as acetic acid or its salt and they are emulsified by mixing. The concentrate of milk serum protein is desired to contain more than 50% crude protein and more than 45% water-soluble protein on the solid basis. Thus, an O/W type acidic emulsion food is obtained. The product is good in flowability, high in emulsion stability, good in texture and high in storability without change with time, observed, when starch is used.
