CONSTITUTION: A vegetable tissue material (e.g., rice bran, wheat bran, straw, bagasse) is converted into resource in a culture solution of mold fungi (e.g. Aspergillus group, Basidiomycetos group) to produce hemicellulose having biological activity such as immune activation, macrophage activation (sthenia of glycolysis), anti-virus action or lipid metabolism-improving action. A preferably process is as follows: starch contained in the vegetable tissue material is hydrolyzed by glucoamylase followed by extraction with a dilute alkali solution, the resulting extract solution being neutralized and precipitated to isolate hemicellulose, which is converted into resource in the culture solution of mold fungi.
