CONSTITUTION: A composition comprising 100pts.wt. of a hydrophobic substance, e.g., paraffin, a higer fatty acid, etc., 40W400pts.wt. of water, 0.015W5.0pts.wt. of a surface active agent, e.g., sucrose ester of fatty acid, lecithin, etc., and 0.015W 1.5pts.wt. of a water-soluble high polymer substance, e.g., gum arabic, gelatin, etc. is emulsified and dispered uniformly by using a water homogenizer mechanically, and sterilized at 100W140°C for 0.1W30 minutes to give a freshness retaining agent, which is applied directly or after one to three times dilution to fresh agricultural products, e.g., eggs, fruits, vegetables, etc. The storage period can be prolonged 3 to 10 times and the agent can be removed with ease only by letting water flow on it.
