CONSTITUTION: A fermented food, e.g. sake lees, sweet sake lees or fermented soybean, and a food of edible microbial cells, e.g. bread yeast, beer yeast or lactic acid bacteria, are partially hydrolyzed with dilute hydrochloric acid or sulfuric acid or sodium hydroxide at 100W110°C for 30W60min and then adjusted to pH 7.0W 8.0 with sodium hydroxide or hydrochloric acid. Amino acids and saccharide contained in the hydrolyzate are subjected to the Millard reaction at 100W110°C for 1W 10hr to form melanoidine. The resulant melanoidine is then mixed with amino acids and peptides formed by the hydrolysis to give the aimed antioxidant.
