CONSTITUTION: An odorless garlic extract drink is prepared by culturing Basidiomycetes (e.g. Cortinellus shiitake, Coriolus versicolor, Schizophyllum commune) in a liquid, and adding a suspension or extrat of garlic to the liquid. Garlic contains a number of active components; however, the characteristic odor of the allyl compounds contained therein cannot be eliminated by any deodorizing treatment. Furthermore, the use of the extract of Cortinellus shiitake has been limited by its characteristic after-taste. The characteritsic garlic odor can be deodorized by the decomposing activity of enzyme of the mycelia, and at the same time, the after-taste of the raw Basidiomycetes can be eliminated by adding the suspension or extract of garlic as an autolytic agent of mycelia.
